Tonight I made jambalaya. I got the recipe from one of the blogs I read. It's from Allrecipes.com. It definately has a kick but it's not super spicy. This is the 2nd time I've made it. Steve was at a late meeting and didn't get home until 9 p.m. Kylie loved the jambalaya, especially the green pepper. It's easy to make too.
Here's the recipe:
1 tsp. olive oil
1 chicken breast, cut into bite-sized pieces
4 oz. kielbasa, diced
1/2 onion, diced
1/2 green pepper, diced
1/4 c. celery, diced
1 tbsp chopped garlic
dash of cayenne pepper
1/4 tsp. onion powder
1 c. uncooked white rice
2 c. chicken stock
2 bay leaves
1 tsp. worchestershire sauce

Heat oil in large pot over medium high heat. Saute chicken and kielbasa until lightly browned, about 5 minutes. Stir in onion, green pepper, celery and garlic. Season with cayenne and onion powder. Cook 5 minutes, or until onion is tender and translucent. Add rice, then stir in chicken stock and bay leaves. Bring to a boil, then reduce heat, cover and simmer 20 minutes, or until rice is tender. Stir in the worchestershire sauce. (I also add Frank's Red Hot Sauce to my serving for extra kick).
